2 oz bittersweet bakers chocolate
2 T cocoa, unsweetened
2 1/2 T cornstarch
1/2 c sugar
1/8 t salt
2 1/2 c skim milk
2 t vanilla extract
Whisk together next 4 ingredients, slowly add milk while whisking until smooth. Warm milk mixture and whisk in the chocolate.
Bring to a boil, stirring constantly.
Once boiling, reduce heat to low and cook 2 minutes, stirring constantly.
Remove from heat. Add vanilla. Pour into 6 custard dishes. Refrigerate.
