Whole Wheat Banana Muffins

Introduction

These are so moist and sweet you'd never know they are low cal! These are so moist and sweet you'd never know they are low cal!
Number of Servings: 19

Ingredients

    about 7 very ripe bananas
    1c White flour
    1c Wheat Flour
    1 tsp baking soda
    1 stck Butter
    1/2c Brown Sugar
    1/4c Splenda
    2 egg whites
    1 tsp Vanilla extract
    1 1/2 tsp Cinnamon

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda, cinnamon and salt. In a separate bowl, cream together butter Splenda and brown sugar. Stir in egg whites, vanilla and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared Muffin pan.
Bake in preheated oven for 25 to 35 minutes, until a toothpick inserted into center of the Muffin comes out clean. Let muffins cool in pan for 10 minutes, then turn out onto a wire rack.
