Cucumber Salad

Introduction

Light tasty salad Light tasty salad
Number of Servings: 18

Ingredients

    8 cups peeled cubed cucumber
    2 cups chopped green pepper
    1 cup minced red onion
    half a bunch of cilantro (washed) course chopped
    1 cup Banana peppers chopped
    1 jar of capers drained
    30 green stuffed olives, chopped in half
    16oz container of cherry tomatoes chopped in half
    4 TBSP Lite ranch Dressing
    1/2 cup lime juice
    1 cup Italian Salad dressing
    salt and pepper to taste

Tips

Add Blacked pitted olives halved if you really like olives


Directions

Prepare all ingredients, put all ingredients in large bowl. Put in refrigerator for 4 hours to let juices marinate. Stir every hour if you have the time. (Flavors blend better if stirred or the 4 hour period)
