Tomato Basil Soup

Ingredients

    Use non fat, low sodium chicken broth. I use canned, diced tomatoes, but could substitute fresh tomatoes equivalent to same quantity. Excellent!

Directions

Heat oil in large sauce pan over medium heat, add garlic, cook 30 seconds, stirring constantly. Stir in broth, salt, sugar, and tomatoes. Bring to a boil and reduce heat to low. Simmer 20 minutes. Stir in chopped basil. Place half of the soup in a blender, process until smooth. Pour pureed soup into a bowl, and repeat procedure with remaining soup.

Serving Size: Makes 4 1-1/2 cup servings
