Brown Rice Pilaf

Number of Servings: 4

Ingredients

    1/4 cup chopped mushrooms
    1/4 cup chopped celery
    1/4 cup chopped green onions
    1/4 cup chopped red pepper
    1 cup uncooked brown rice
    2 1/2 cups water
    Cooking Spray

Directions

Preheat oven to 350. Coat a large 3 qt. casserole dish with cooking spray.

Briefly saute vegetables in small fry pan until translucent or soft, but not mushy. Place all ingredients in casserole dish and cover. Put in the oven for 45 minutes or until all liquid is absorbed. Serve as a delicious accompaniment to meats and seasonal vegetables.
