Lower Fat Potato Salad

Ingredients

    8 medium potatoes, boiled and diced
    1/2 large onion, chopped
    3 celery stalks (med), chopped
    4 medium radishes, thinly sliced
    3 TBSP chopped Italian parsley
    3/4 cup Hellman's light mayo
    1/4 cup nonfat Greek yogurt
    1/4 cup reduced fat sour cream
    3 TBSP yellow mustard
    1 TBSP cider vinegar
    1 tsp salt
    1/2 tsp black pepper
    2 hard boiled eggs, sliced

Directions

Place potatoes, onion, celery and radihes in large bowl. In a small bowl, mix the rest of the ingredients (except eggs); stir into veggie. Top with egg slices. Best if potatoes are dressed while warm and salad is chilled for at least an hour before serving.
