Fancy Rice "Pudding"

Ingredients

    2 egg whites
    1/4 cup nonfat milk
    1 T brown sugar
    1/2 cup cooked brown rice
    12 raisins
    1 small apple w/skin , cut into small pieces
    1/2 small carrot, peeled and shredded
    1 T soy protein
    1/2 T bran
    1 t cinnamon

Directions

Wire whisk egg whites w/milk and brown sugar. Stir in the remaining ingredients. (Also add 1/2 T Brewer´s yeast, optional - remember to increase the calorie content.) Put into an oiled microwave bowl slightly larger than the mixture. Microwave 5 to 10 minutes, stirring once after 3 minutes. Serve warm or cold.
