Ingredients
-
3 cups oatmeal dry oldfashioned oats
1 stick
Brown Sugar, .5 cup, packed
*Splenda, 1 cup
Egg, fresh, 1 large
2 egg whites
Salt, .5 tsp
*Flour, white, .5 cup
Baking Soda, 1 tsp
Cinnamon, ground, 1 tsp
Vanilla Extract, 1 tsp
1c wheat flour
Directions
Cream Butter and all Sugars, including splenda.
Scrape down sides of bowl
Sift all dry ingredients together except oats, raisins, and walnuts. Combine those 3 ingredients in seperate bowl.
Slowly add one egg at a time to mixer (including egg whites)
Add vanilla
Scrap down sides of bowl
Turn mixer on low and add one heaping scoop of sifted dry ingredients at a time.
Once all dry ingredients are combined add oats, raisins, and walnuts all at once. If you have a stand mixer you can do this on stir speed if you dont then I reccomend using a wooden spoon and adding by hand.
Drop tblspoons of cookie dough on cookie sheets and bake at 350 for about 10min or until golden brown on the edges and bottum.
Allow cookies to cool on cookie sheets for about 5-10 min then move to wire rack to cool until at room temperature. Remember to store in an air tight container as these are soft cookies and will go hard rather fast if not eaten.... Which shouldnt be a problem!! :)
