South Beach Mini Breakfast Frittatas

Number of Servings: 12

Ingredients

    1 Package (10 0z) frozen cut green beans
    4 Sun Dried tomato halves (in oil)
    1 t Italian herb blend
    1/4 t salt
    1 1/4 egg whites
    3/4 cups shredded part skim mozzarella cheese (3 oz)
    Black pepper

    Heat oven to 350 degrees. Coat a muffin pan with cooking spray.

    Place beans in a strainer and run hot water over them to thaw. Drain well, pressing to get out as much liquid as possible.

    Combine beans, tomatoes, scallions, herb blend and salt in a food processor. Chop coarsely. Add egg whites and pulse just to combine,

    Spoon 2 T mixture into each muffin cup. Top with 1 T cheese. Season with pepper. Bake for 20 minutes or until done.

    Serve warm, at room temperature or reheat in micro-wave.
