Introduction

Recipe from back of bag: Bob's Red Mill Whole Grain Apple Cinnamon & Grains Hot Cereal. Slightly modified to include whole wheat flour and healthy oils. Ingredients

    2 cups Bob's Red Mill Quick-Cooking Rolled Oats
    1 cup Bob's Red Mill Unbleached Flour
    1 cup Bob's Red Mill Whole Wheat Pastry Flour
    1/2 cup Brown Sugar, packed
    1/3 cup Wheat Bran
    1/3 cup Bob's Red Mill Whole Grain Apple Cinnamon & Grain Cereal
    2 Tablespoons Baking Powder
    1 teaspoon Salt
    2 Eggs
    1 1/2 cup Milk, skim
    1/2 cup Canola Oil
    1/3 cup Honey

Directions

Preheat oven to 400 degrees. In large mixing bowl, Stir together the oats, flours, sugar, bran, Apple Cinnamon & Grains Cereal, baking powder and salt. In medium bowl COMBINE eggs, milk,oil and honey. ADD egg mixture all at once to dry ingredients. STIR quickly just till dry ingredients are moistened. LINE muffin pans with paper baking cups; fill 2/3 full. BAKE 15 minutes or until done. Makes about 36 muffins.
