I found a recipe and made it with a few alterations...

Number of Servings: 4

Ingredients

    Ingredients:

    1 lb of Chicken breast boneless & skinless (cubed 1 inch)
    6-8 medium red potatoes (1/2 inch cubes)
    1/3 cup oil (canola, virgin olive oil) your choice
    2 tbsp garlic powder
    2 tbsp black pepper
    4 tbsp salsa (mild, medium, or hot)
    2 cups of cheese
    1 cup of crumbled bacon
    1 cup of sliced onion (red, yellow, or green)

Directions

Pre heat the oven to 400
Mix: oil, salt, pepper, garlic powder, & salsa
Add: cubed chicken and potatoes fold it all in until all is coated
Place it in a baking dish (a casserole dish works great) bake for 45-50 minutes
Stir the mixture every 20 minutes
Pan fry your bacon and then cut it up
Once chicken and potatoes are cooked add the cheese, bacon, and onions
Bake another 5 minutes to melt the cheese

Serving Size: 1 1/2 cup per serving
