Garlicky whole wheat bread with Chicken stock

Introduction

Why use water when you can actually bring in some flavor? Why use water when you can actually bring in some flavor?
Number of Servings: 16

Ingredients

    Active Dry Yeast, 4 tsp (remove)
    *Bob's Red Mill Vital Wheat Gluten, 0.55 cup (remove)
    *Whole Wheat Flour, 2.2 cup (remove)
    Granulated Sugar, 6 tsp (remove)
    *Chicken Stock - Kitchen Basics, Original, 1.5 cup (remove)
    Garlic juice, 1 tsp (remove)

    In large bowl, dissolve yeast and sugar in room-temperature stock.

    Let stand 5 minutes or until yeast foams.

    Mix flour and gluten well. (the actual mix is 1 cups flour to 1/4 cup gluten. I mix up batches ahead of time to make bread with.)

    Stir in the flour mixture in small increments to make a very stiff dough, moistening at times with garlic juice.

    Turn out onto lightly floured board and knead 10 minutes or until dough is springy, smooth and satiny.

    Wash bowl, grease it, and add dough to bowl; turn over to grease top. let rise at least a half hour. place into greased 8 inch loaf pan and let rise another half hour

    Bake in 400 degree oven until it sounds hollow when you knock on the top.

You can get good garlic juice on Amazon.com. I like the stuff in the pump spray bottles.
