Vegan Penne Pasta

Number of Servings: 8

Ingredients

    2 Cups penne pasta - uncooked
    1 Cup baby carrots - halved lengthwise
    3 cloves garlic, minced
    1 Tbs olive oil
    2 (14 1/2 oz) cans stewed tomatoes
    2 cups green beans
    2 tsp dried basil
    1/2 tsp dried oregano
    1/4 Cup water
    3 Tbs cornstarch

Directions

1. Cook pasta as per package directions.
2. In a large skillet, saute carrots and garlic in oil until tender.
3. Add tomatoes, beans, basil and oregano. Bring to a boil.
4. Reduce heat and simmer uncovered until all vegetables are tender.
5. Combine water and cornstarch until smooth, then stir into vegetables.
6. Return to a boil; stir for two minutes or until sauce has thickened.
7. Drain pasta and stir into veggies and serve.
