IntroductionMeat salad made from simmered spareribs (from bone broth). Meat salad made from simmered spareribs (from bone broth).
3 lbs raw pork spareribs
1/2 c mayo
3 T prepared yellow mustard
1/4 c sweet pickle relish
salt and pepper to taste
The data for the meat portion is from the USDA database for raw pork spareribs. There was no notation for just the meat portion (although I'm assuming it MEANS the meat portion, since we don't eat the bones). But the nutrition label generated here may not be 100% accurate as a result.
Roast at 350°F until done and browned.
Put ribs in stockpot and simmer until tender (making bone broth).
Remove ribs and pick meat into a separate container.
Return bones to pot to continue with bone broth.
Shred or chop the meat into meat-salad-sized pieces. Add about 1/2 cup of mayo, 3 T of prepared yellow mustard, and about 1/4 cup of sweet pickle relish.
Other additions might be bacon bits, cheese, chopped veggies (onions, olives, green onions...), hard-boiled egg... per your taste. *These are not included in the nutrition data for the recipe.*
Mix well and refrigerate to marry flavors.
