Marinated Vegetable Salad

Introduction

Number of Servings: 8

Ingredients

    1 can cut green beans -drained
    1 can sweet corn -drained (shoepeg corn is great!)
    1 can black beans-drained
    1/2 can sweet peas-drained
    1 cup chopped carrots
    1/2 cup chopped green onions (or red)
    1/4 cup chopped green peppers
    1/2 cup chopped celery
    3 or 4 packets artificial sweetener
    Vinegar and oil salad dressing
    Salt, pepper, and garlic powder

Directions

2. Pour salad dressing (enough to cover) and mix vegetables thoroughly with dressing
3. Add Seasonings and artificial sweetener.
4. You may vary the seasonings to suit your taste.

You can also vary the ingredients, eliminating anything you don't like or adding other vegetables. The longer this salad sits, the more flavor it gets. Stored in a covered container, this salad will keep for at least 5 days. I like to make a batch and bring some to work each day for lunch.
