Impossible Coconut Pie

Ingredients

    1 stick unsalted butter(melted)
    1 C Brown sugar
    4 L Eggs
    2 C Shredded Coconut(sweetened)
    2 C Almond Milk
    1/2 C Almond Flour
    3/4 tsp Baking Powder
    1/4 tsp Salt

Directions

Preheat oven to 350* and butter two 9-in glass pie plates. In bowl combine almond flour, baking powder, salt and coconut. set aside. In separate bowl whisk sugar and butter. Add eggs and beat until smooth, add milk. Add Flour mixture and stir well. Divide mixture between the pie plates and bake in the lower third of the oven for about 1 hour, until the pies are firm to the touch and golden. cool completely before serving.
