Ingredients

    1.5 cups of chopped onion (1/2 large onion)
    6 cloves of garlic, minced
    1.2 pounds of ground turkey, 93% lean
    1 cup of diced celery (4 or 5 stalks)
    2 medium-sized green bell peppers, chopped
    2 -14.5-oz cans of diced tomatoes
    1 -8 oz can of tomato sauce
    1 cup of pumpkin puree (canned)
    1 tbsp chili powder
    1.5 tsp cumin
    1 tsp oregano
    1/4 to 1/2 tsp ground black pepper
    1 -15.5 oz can dark red kidney beans

Directions

Use a large saucepan or stockpot on the stovetop. Add onions, garlic, and ground turkey to the pot. Crumble and brown the meat. Add the tomatoes, tomato sauce, pumpkin, green peppers, celery, and spices. Stir well and bring to a boil. Strain and rinse the canned beans, then add to the pot. Reduce heat and simmer for 20 to 30 more minutes. Serve.
