these muffins taste like WAY more than 88 calories per muffin! these muffins taste like WAY more than 88 calories per muffin!
Number of Servings: 12

Ingredients

    2 cups oat bran
    1/4 cup firmly packed brown sugar
    2 teaspoons baking powder
    1/2 teaspoon slat (optional)
    1 cup almond milk
    1/3 cup egg white replacer
    1/4 cup molasses
    2 tablesppons flaxseed oil
    2 tablespoon flaxseed

Tips

you can substitute honey for molasses and actual egg whites (use 2 if so) but make sure egg whites are slightly beaten. basic recipe is on quaker oat bran cereal but by using REAL oat bran and my "tweaks" i brought calorie count to 88 calories from 120 per muffin!

Directions

heat oven to 425. line 12 muffin cups with baking cups or spray bottoms only with nonstick spray. combine dry ingredients; mix well. add combined milk, egg whites, molasses, and oil; mix just until dry ingredients are moistened. stir in blueberries and flaxseed. fill prepared muffin cups 3/4 full. bake 15-17 minutes or until golden brown.
