Turkey Topper

Introduction

Ingredients

    1 package extra lean ground turkey
    1 zucchini, finely diced
    1/2 large can diced tomatoes, or about 1.5 cups
    2 slices hearty whole wheat bread, with toast, diced
    2 cloves garlic
    1/3 cup fat free half and half
    2 tsp. grated parmesan for garnish

Directions

start by sauteing the garlic in a bit of cooking spray in a large, non-stick skillet. add in ground turkey, and season to taste, adding your favorite herbs and spices (I like oregano and garlic pepper). once that's just done, add in the tomatoes and the zucchini. if the tomatoes aren't spreading all the way through, add a little water to thin the sauce and get all that turkey coated!

once the zucchini is nice and tender, stir in the fat free half and half until combined.

serve over pasta, or eat it alone, do whatever it's really good! sprinkle with the parmesan at the last second for added delight!
