Mama Carol's Vegetarian Chili

Number of Servings: 6

Ingredients

    12 oz cubed or grated tempeh (your choice)
    ----Note: 1 package tempeh is 8 oz.
    3 Tbs Tamari
    2 Tbs extra virgin olive oil
    2 Onions, Chopped
    8 Cloves garlic, minced or pressed
    2 c vegetable broth
    1 can (1.75 c/15oz) petite diced tomatoes
    1 can (1.75 c/15oz) pinto beans
    6Tbs Chili Powder
    2 Tbs cumin powder
    1 tsp black pepper

Directions

Mix together cubed tempeh and tamari, set aside.
Saute together oil, onions and garlic till tender. Add tempeh mixture and saute till golden brown.
Add veggie broth, tomatoes and seasonings, bring to a boil and let simmer 15 minutes.
Add pinto beans and simmer an additional 5 minutes

Serving Size: Makes 6 - 1 cup servings
