1 c. flour
1/2 c. sugar
1 tsp. baking powder
1/2 c. milk
1/4 c. vegetable oil
This is a template recipe. Add 1/2 cup of dried fruit (or fresh fruit, like blueberries) to make a traditional fruit muffin. Reduce sugar and add Parmesan cheese & rosemary for muffins that go well with soup. Omit milk and use orange juice, add dried cranberries and have some orange-cranberry muffins. Spoon into muffin papers and bake at 400 F for 20-25 minutes. Muffins are done when the tops spring back when lightly pressed down.
