Introduction

Celebrate National Mustard Day with this wonderful variation on chicken salad. It can be served on a bed of greens for a brunch, on on chunky bread with cheese for a "Manwich." Number of Servings: 1

Ingredients

    4 oz pre cooked chicken breast cut into cubes
    1/2 avocado (67 g) cut into cubes
    1 tsp (1/3 Tbs) cayenne/red pepper
    1 tsp dry dill weed
    2 tsp dry yellow mustard Coleman's brand

    Mix all together. Add touch of salt if necessary (1/4 tsp).
    Spread onto toasted bread, muffins, or add to salad greens.

    Flavors will increase if allowed to stand, but the surface may discolor. Just stir that into the center of the mix and eat on! Covering with plastic that has been placed down onto surface of food will avoid discoloration.
