Salmon with Pineapple-Jalapeno salsa

Number of Servings: 4

Ingredients

    2 cups chopped pineapple
    1/4 cup finely diced red onion
    1/4 cup finely chopped bell pepper
    1 Tbsp lemon juice
    2 Tsp sugar
    1 jalapeno pepper finely chopped
    1/2 Tsp salt devided
    1 dry chile finely ground
    1/4 Tsp black pepper Ground
    1 Tsp Herbes de Provance
    4 x 4oz salmon filets or 1 piece at 16 oz.
    1/2 Tbsp oil

Directions

Combine the first 6 ingredients in a bowl, stir in 1/4 Tsp salt set aside.
Heat non stick skillet with oil (or spray to save calories)
Combine the rest of the salt with the remaining spices
sprinkle evenly over fish.
Add fish to pan skin side up cook for 4 minutes on each side or until it is done to your liking, serve with salsa.

Serving Size: makes 4 servings @ 4oz each and 1/4 cup salsa
