Introduction

Ingredients

    3 cups mixed salad greens
    2 tablespoons vinaigrette (bottled or homemade)
    3 ounces chopped cooked chicken breast
    1/4 cup chopped red bell pepper (or red onion), finely chopped (added for crunch--celery would also be good)
    1/4 cup berries (we used raspberries and blackberries)
    1/4 ounce pecans or walnuts (about 5-6 nuts)

Tips

If not eating immediately, store the dressing separately to avoid soggy greens.


Directions

Toss the greens with the dressing in a large bowl. Top with remaining ingredients and serve.

    I made something similar to this the other day with greens, blueberries, celery, sweet onion, toasted walnuts, feta cheese and balsamic dressing. Grilled a chicken breast and sliced it and served it over the top--hubby said it was delicious and I agreed. :D - 8/9/13
