Zucchini and Mushrooms with Couscous

Introduction

Made this to take to a co-worker for lunch, needed to use up some of the zucchini from my garden Made this to take to a co-worker for lunch, needed to use up some of the zucchini from my garden
Number of Servings: 5

Ingredients



    3 cups zucchinini sliced
    6 large mushrooms sliced
    1 boneless skinless chicken breast
    2 tsps. minced garlic
    1 box Near East Roasted garlic and Olive oil Couscous
    12 grape tomatoes
    Mrs. Dash Garlic and herb seasoning
    3 tbsps. olice oil

Tips

I added the grape tomatoes to give the dish some color appeal, but added them at the end so they would not get mushy.


Directions

In a small frying pan, place one tbsp. olive oil and chicken breast, season with Garlic and herb seasoning, sauté until cooked through.
Prepare box of couscous as directed on box. ( I used the 5 minute cooking time so I would not have be stirring and watching over)
In large frying pan, add the rest of the olive oil, zucchini, mushrooms and minced garlic. Saute until mushrooms (sliced) and zucchini are slightly soft. Cut up chicken breast and add the cooked couscous stir until well blended. Add grape tomatoes, toss gently.

Serving Size: makes 5 1 cup servings
