Stuffed Mushrooms

Introduction

I kind of threw these together one night and they were so good my roommates request them at least once a week! The recipe leaves plenty of room for interpretation. The Nutritional Info might not be 100% accurate because there is no way to enter an entire portabella mushroom into the recipe calculator and I'm not entirely sure how much 100 grams is. Ingredients

    4 Large Portabella Mushrooms
    2 tablespoons Olive Oil
    1 can Great Northern Beans, drained and rinsed
    1 can diced tomatoes, no salt added, drained and rinsed
    1 cup chopped onion
    1 cup chopped bell pepper, any color
    1 small bulb of garlic, minced
    3 cups spinach
    2 tbs milled flaxseed
    4 tsp parmesan cheese
    3 slices whole wheat bread ground into breadcrumbs
    basil (as desired)
    oregano (as desired)
    thyme (as desired)
    crushed red pepper (as desired)
    salt and pepper, to taste

Directions

Makes 4 Servings, one mushroom per person.

Preheat the oven to 350.
Use one tablespoon of olive oil to coat the bottom of a baking sheet.
Remove Portabella stems and place head down on baking sheet.
In a large skillet, heat remaining tablespoon of olive oil add garlic and spices and saute until garlic begins to turn golden.
Add onion, peppers tomatoes and beans, cook until ingredients are fragrant and begin to brown.
Wilt in spinach.
Remove from heat.
Toss sauteed vegetables with breadcrumbs, flaxseed and parmesan cheese.
Divide the filling equally between the mushrooms and stuff.
Cook at 350 until the portabella mushrooms are cooked through, about 20-25 minutes. Cooking times may vary depending on the oven and/ or the size of the mushrooms used, so watch them closely after 10-15 minutes.
Serve hot and enjoy!
