Sweet and Sour Chicken

Introduction

Number of Servings: 4

Ingredients

    .5 cup orange marmalade
    2.5 tsp honey mustard
    .5 tsp lite soy sauce
    .5 tsp salt
    1 tsp minced garlic
    1 lb chicken thighs ( boneless, skinless )
    2 cups brown rice ( or white )
    1 kiwi , sliced ( optional )
    1 orange , sliced ( optional )
    rind of orange ( optional )

Directions

1. Combine first 5 ingredients in a small saucepan. Cook over low heat until marmalade melts, remove from heat and set aside.
2. Place chicken in a 13 * 9 * 2 - inch baking dish coated with cooking spray. Bake, uncovered, at 450 degrees for 10 minutes. Pour marmalade mixture over chicken, cover and bake at 350 degrees for 30 - 35 minutes or until chicken is done.
3. Combine rice and orange rind ( optional ). Spoon 1/2 cup rice mixture onto each serving plate. Place 2 chicken thighs over rice on each plate. If desired, garnish with kiwi fruit and orange slices.
