Introduction

With no-sodium dried beans With no-sodium dried beans
Number of Servings: 12

Ingredients

    46 oz low sodium vegetable juice (V8)
    (2) 10-oz cans diced tomatoes
    (2) garlic cloves, minced
    (1) teaspoon chili powder
    (1) lb lean ground beef, browned, drained.

    PREPARED AHEAD OF TIME (0vernight soak, rise):
    (1) 1/2 cup dried pinto beans
    (1) 1/2 cup dried baby Lima beans
    (1) 1/2 cup dried small red beans
    (1) 1/2 cup dried black beans

    FINAL PREP:
    Combine all ingredients, simmer chili on stove (or crockpot) until beans are tender, about 2 hours.

Directions

Soak beans overnight in 8 cups of water. Drain off water and rinse beans before combing other ingredients.
