Healthy Homemade Meatloaf

2 cups cooked red or plain quinoa (1 cup dry + 2 cups water)
2 cups raw carrots shredded/grated
2 cups raw green cabbage shredded/grated
18 ounces ground elk round steak (very lean)
18 ounces ground lean pork
16 ounces organic beef (lean)
2 cups grated Colby cheese
1/4 cup grated parmesan (or parmesan/Romano) hard
1/2 cup (or approx. 8 TBSP) raw shelled hemp seeds
2* large brown eggs
3 tsp.* Lea & Perrin's Worchestershire Sauce
2 TBSP.* dried parsley flakes
1.5 tsp.* garlic powder
1 tsp.* Himalayan (pink) sea salt or French grey sea salt
1.5 tsp* fresh minced thyme or 1/2 tsp. dry thyme leaves
1/4 tsp.* freshly ground black pepper
1/4 tsp.* ground cayenne (red) pepper
*seasoning may be changed according to taste.
1-2 more eggs may also be used, but I had only 2 when I prepared this recently, and to my surprise, it turned out very good.
veggies: chopped onion, bell peppers, zucchini, apples, etc... may be used in place of or mixed in with carrots and cabbage...use whatever you have around that is fresh, but keep total veggie mix to 4-5 cups.
meat: use whatever you enjoy or have handy (that is lean)
cheese: this can be omitted or switched with other cheeses
This meatloaf can be served plain or with your favorite sauce, topping or gravy.
Preheat oven to 350°F
Form mixture into 2 large loaves in medium to large rectangular baking or roasting pan (8-9" x 14-15"). (each loaf placed on the "short" sides, leaving center open) and place foil between the two loaves (creating a little indent by lining the bottom and only touching the sides of each loaf) -or- place in individual loaf pans (this may need 3 loaf pans)
Bake at 350°F for 60 minutes (or until internal temperature of loaves reach 160°F)
Serving Size: makes approx. 22 servings (roughly 2/3" slices)
