Zucchini Veggie Skillet

Introduction

Great for using up your zucchini. Also tastes great cold or hot! Great for using up your zucchini. Also tastes great cold or hot!
Number of Servings: 6

Ingredients

    1 Tbspn oil or butter
    1 large onion
    2 or so carrots, shredded
    2 medium-sized tomatoes
    2-3 medium-sized zucchini (or 1 large!)
    dash of salt & pepper
    up to 1 Tbspn Basil
    2 chopped cloves of garlic

Tips

Could always add other veggies: celery, mushrooms, red peppers.
Can sprinkle some Parmesan Cheese on top if desired.


Directions

Start with a non-stick pan. Choose what you would like to saute' the onions in (ie. olive oil, grapeseed oil, nonflavored coconut oil, butter).

Add chopped onions to heated pan. While they are cooking, shred carrots on top of onions. Then add 1 chopped tomato. Sprinkle 1/2 of basil on top.

Chop 2-3 medium-sized zucchini or 1 large zucchini. Place on top of cooking veggies. Then add the other tomato, sprinkle on rest of basil, and sprinkle on your chosen amount of salt & pepper. Can use either garlic powder or 2 or so cloves of garlic crushed & chopped.

Cover and cook 5-7 min. Then mix ingredients, bringing what's on the bottom more to the top. Cover and cook about 5-7 min longer, allowing the veggies to be softened (but NOT mushy).

Can serve hot or cold. Can sprinkle some Parmesan Cheese on top if desired.
