Introduction

When you just need a little yummy for the tummy that is sweet, but not going to overdue it....these are the mini muffins you'll want to try. When you just need a little yummy for the tummy that is sweet, but not going to overdue it....these are the mini muffins you'll want to try.

Ingredients



    *Bobs Red Mill Spelt Flour, 1 1/2 cup
    *Baking Powder, 1 tsp
    *Baking Soda, 1 tsp
    *Salt, 0.25 tsp
    *Egg, fresh, raw, 1 large
    *Melted Butter Light, 2 Tbsp
    *Sugar, 1/4 cup
    *Really ripe Bananas, 3

Tips

You can add other fruit such as blueberries or raspberries. When I'm hungry for a little something yummy, I grab two to satisfy the urge. Be sure to package these in ziplock bags so you don't try to eat all 24 servings in one sitting! These freeze very well and can be saved for a rainy day!


Directions

In a bowl mix Spelt flour, baking powder, baking soda, and salt together. In another bowl mash the bananas to liquid-like consistency. Add one large egg, 1/4 cup of sugar, and melted butter to the mashed bananas and mix together. Then pour the banana mixture in with the flour. Mix well. Be sure to spray the mini muffin pan with a butter spray such as Pam cooking spray. Fill the muffin tins 3/4 and then cook in the oven at 350 for 16-20 minutes.

  • A mouthful of goodness! I used 1/2 cup sugar cus' I like my muffins a little sweeter. Hard part is not eating all of them in one sitting. Good idea to bad and freeze em so you don't eat them all. - 8/23/13
