Spinach & Orange Salad

Ingredients

    6 cups baby spinach, cleaned and dried
    1 (6 oz) can mandarin oranges, drained
    2 Tbsp red onion, thinly sliced
    3 Tbsp walnut pieces, toasted
    salt and pepper to taste

    Dressing
    1/2 Tbsp olive oil
    1/2 Tbsp white wine vinegar
    2 Tbsp trop50 orange juice
    1/2 Tbsp honey

Directions

Preheat oven to 350. Toast walnuts on a small baking sheetfor 6- 8 minutes, or until lightly browned.

Slice red onion; cut slices in half and separate rings. Whisk dressing ingredients together in a small bowl. Combine spinach, oranges and red onion in a large bowl. Toss with dressing and season to taste with salt and ground pepper. Sprinkle with toasted walnuts and serve.
