Vegetable Quiche

Introduction

Number of Servings: 8

Ingredients

    2 lg. eggs
    2 egg whites from fresh eggs
    1.5 cup of Half & Half or Milk if desired
    1 tsp of nutmeg
    1/2 tsp of salt (sel du mer)
    1-1/2 cup of semi-soft, low fat Jarlsberg Cheese, grated
    1 cup of fresh spinach
    1 9-inch pie crust

Tips

You may have some liquid left over - discard but use all the cheese. Scoop out all the cheese before and add to pie. For meat lovers other added option to pie can be turkey bacon or ham.


Directions

Beat eggs and eggwhite with half and half, nutmeg and salt until well mixed and smooth. Fold the cheese into the mixture (leave some cheese to sprinkle onto the bottom of the pieshell). Place fresh spinach leaves into a small frying pan and briefly cook until wilted. Add wilted spinach in smaller pieces after the cheese and stir so that all ingredients are well mixed. Pour mixture into pie crust. Preheat oven to 400 and bake until golden brown or is well cooked through. (20 - 30 minutes)
