Introduction

Great variation on traditional tuna salad. Add mandarin oranges, pimiento stuffed olives, and raspberry viniagrette for a healthier alternative. Great variation on traditional tuna salad. Add mandarin oranges, pimiento stuffed olives, and raspberry viniagrette for a healthier alternative.
Number of Servings: 1

Ingredients

    1 3.5 oz can low-sodium chunk light tuna packed in water

    1.5 tbsp of Lite Raspberry Viniagrette (or can substitute Red-Wine Viniagrette or light champagne)

    4 small pimiento-stuffed green olives, chopped

    1/8 c mandarin oranges, drained (about 7 sections)

    2 tsp minced red onion

    1/2 tsp minced garlic

Directions

Mix all ingredients together and chill. Serve on whole-wheat bread or inside of medium red bell pepper (seeded and cut into halves).
