Lemon Butter Shrimp Risotto

    Shrimp - 8 Jumbo Shrimp, peeled and devained
    Arborio Rice - 1.5 cup
    Baby Spinach - 1 cup
    Lemon, fresh squeezed, juice of one whole lemon
    White Wine - 1/4 cup
    Unsalted Butter - 1/2 stick
    Seafood Cooking Stock - 3 cups
    Water (to decrease salt taste from stock) - 1 cup
    Fresh parsley - chopped for garnish


In a separate small saucepan, add stock and water and heat on a stove in a simmer.

Add butter to hot pan and let it melt completely. Add rice and stir, making sure rice is coated and toasted.

Add wine and let simmer for about 3 minutes or so or until liquids are absorbed.

Begin adding 1/2 cup of stock and stir constantly until rice absorbs liquids almost completely. Continue adding 1/2 cup of stock and repeat until all stock is gone and rice has formed thick creamy texture.

Add spinach and shrimp and let cook for another 5-10 minutes or until shrimp is pink. Garnish with parsley and serve.
