Peanut Chicken and vegetables

Ingredients

    1 chicken breast, bone and skin removed
    2 cups of cooked broccoli
    1/2 cup of red bell pepper sliced
    1/2 cup of julienned carrots
    1/2 a onion diced
    3 cloves of garlic crushed
    1 tsp of sugar
    3 Tbsp of natural peanut butter
    1/2 cup of water
    1 tsp of ground or powdered ginger
    2 Tbsp of sesame oil
    2 tsp of hot pepper sauce
    1 Tbsp of oyster sauce
    1 Tbsp of soy sauce

Directions

Cube the chicken breast. Saute with the onion and garlic in a nonstick pan over medium-high heat until the chicken is cooked through. Add the broccoli, red pepper and carrots and stir fry quickly. Add litle water if needed. Mix the rest of the ingredients together in a separate bowl and pour over the chicken and vegetables. Quickly combine and turn off the heat. Allow to cool 10 minutes. The sauce will thicken. Serve with brown or white rice or cooked whole wheat spaghetti.

  • WOW! ZOWIE! Oh Mama- This recipe IS A KEEPER. I served this over Curried Couscous. It was both pretty & delious. My husband RAVED. One little change: I would heat the sauce in a microwave just enough to get the peanut butter to mix. It melted in the frying pan, but it didn't spread to every bite-YUM - 3/21/08
