Sharon's Spaghetti Squash

Ingredients

    3 pound spaghetti squash
    1 medium baby zucchini
    1 cup fresh mushrooms
    2 cloves garlic
    1 can diced tomatoes
    1/4 cup scallions (green onions white & green parts)
    1/4 cup bread crumbs
    3/4 cup mozzarella cheese shredded
    1/4 cup parsley

Directions

1) Pierce squash all over with fork. Microwave on high 15 minutes, turning once. When cool, halve squash and scrape out the seeds with spoon. Use fork to tease flesh into spaghetti-like strands and set aside,

2) In bowl, mix zucchini, scallion, mushroom and garlic. Stir in squash strands and tomatoes. Evenly spread mixture inside slow cooker. Cook on low 5 hours or until vegetables are tender.

3) During last 15 minutes of cooking, sprinkle cheese, bread crumbs and parsley over the top.
