1 pound packaged frozen hash browns, thawed .5 can cream of chicken soup 1/4 c. chopped onions 1 cup shredded cheddar cheese 1 cup crushed cornflakes 1/4 cup melted butter 4 oz. sour cream (fat free) 1 tsp salt 1 tsp black pepper 2 tbsp. melted butter
Preheat oven to 350. In a large bowl, combine hash browns, 1/4 c. melted butter, soup, sour cream, chopped onion, cheddar cheese, salt and pepper. Place mixture in a 2 quart casserole dish. In a medium sauce ban over medium heat saute cornflakes in remaining butter and sprinkle the mixture over the top of the casserole. Bake covered in preheated oven for 40 minutes.
