Vegetarian Chicken Salad (Quorn)

Ingredients

    Quorn Turk'y Roast (Vegetarian), cooked per package directions
    Duke's Light Mayonaise, 3 tbsp
    Raw White Onion, 1/2 cup, finely diced (adjust to taste)
    Celery stalk 7 1/2 to 8 inch, finely diced (adjust to taste)
    Garlic Powder, 3 tsp (adjust to taste)
    Paprika, 2 tsp (adjust to taste)
    Black Pepper, 2 tsp (adjust to taste)

    Variations: Waldorf Chicken Salad (substitute diced fresh apple for onion and finely chopped walnuts for celery). Asian Chicken Salad (substitute green onion for white onion, Five Spice Powder for paprika, and 1tablespoon of soy sauce or tamari for 1 tablespoon of Duke's light mayonnaise). Please note calorie counts will vary slightly.

Tips

If you prefer a finer consistency, place all ingredients in a food processor and process until it reaches your desired consistency.


Directions

Cook Quorn Turk'y Roast per package instructions. Allow to cool. Cut into 2" thick rounds and use a fork to shred to desired consistency. Place shreds into a medium bowl. Add all other ingredients and mix well. Cover bowl with plastic wrap or transfer to an airtight storage container and chill for 30-60 minutes before serving.

Serve scoops over salad greens, in endive leaves, on celery, or on sandwiches.
