Baked Falafel Sandwiches

Ingredients

Falafel Ingredients:
1 can chickpeas, rinsed and drained
1/4 cup parsley, fresh, chopped
1 garlic clove, minced
1 tsp ground cumin
1/4 tsp ground coriander
1/4 tsp table salt
1/4 tsp baking soda
1 Tbsp all-purpose flour
Sauce Ingredients:
1 Tbsp Tahini or peanut butter (nutrition calculated with Peanut Wonder peanut butter alternative)
1 Tbsp water
1/2 Tbsp fresh lemon juice
Directions
Combine falafel ingredients (except flour) in food processor or blender. Process until coarsely pureed and transfer to a large bowl. Stir in flour; shape mixture into 4 large patties and let stand for 15 minutes.
Preheat oven to 400.
Spray skillet with Pam and heat over medium-high heat. Add patties and cook until golden brown (about 2 minutes per side). Transfer skillet to oven and bake for 10 minutes more.
Meanwhile, whisk sauce ingredients in a small bowl.
Serve 1 pattie in a pita (not included in nutrition info) and drizzle with sauce.
