Low fat lasagna

Introduction

This recipe takes awhile, but is so worth it! This recipe takes awhile, but is so worth it!
Number of Servings: 12

Ingredients

    The sauce:
    5 large carrots grated
    1 cup onion chopped
    2 stalks celery finely chopped
    1 Tbsp olive oil
    4 oz. lean ham
    24 oz. tomato sauce
    4 c. chicken bullion
    Basil, salt and pepper to taste (about 2 tbsp dried basil).

    The lasagne
    1 serving (17 slices) turkey pepperoni (optional)
    1 c. low fat cottage cheese (1%)
    8 ounces low fat cheese like mozzarella. (I used 5 ounces 2% cheese and 3 ounces regular cheddar for the calculations)
    1 pack (8 oz.) no bake lasagne noodles

Tips

The sauce can be made up ahead of time in large batches! It freezes well, too.


Directions

Preheat oven to 350 F
The sauce.
Heat olive oil in a large skillet. Add the ham (I grind mine up in the food processor first) and saute for about 2 minutes. Add the ground vegetables and stir. As the mixture gets dry, add bullion a cup at a time. Let the mixture simmer, adding bullion to keep it moist until vegetables are soft. Add the tomato sauce, basil, salt and pepper. Let the sauce simmer for about 15 minutes.
The lasagne.
Mix half the grated cheese with cottage cheese. Put 1/3 c. sauce into the bottom of the lasagne pan and layer the noodles on top of it. Then, add half of the cheese mixture and 1/3 of the remaining sauce. Repeat, adding the turkey pepperoni to the second layer. Top with the final layer of noodles and the last 1/3 of the sauce. Sprinkle remaining cheese on top. Cover with foil and bake at 350 for 30 minutes. Uncover and cook for an additional 10. Let stand for 10 minutes and enjoy!

Serving Size: Makes 12 servings. 1/12th of a 9 X 13 pan.
