Introduction

This casserole was born of a need to eat for a few days until payday. I had chicken breasts, bread crumbs, and soup. That day a church donated canned corn and green beans to our building. Ingredients

    *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.) diced
    *Tyson boneless, skinless chicken breast, 12 oz diced
    Green Beans, FreshCut, Cut Green Beans, No Salt Added, 1.25 cup rinsed
    Yellow Sweet Corn, Canned, 1.25 cup low sodium, rinsed
    *Healthy Request Cream of Mushroom Soup, 1.25 cup
    Almond Milk, Silk pure almond vanilla, 1 cup
    *Colby and Monterey Jack Cheese shredded, 1 cup
    *Onion powder, 2 tbsp
    Garlic powder, 2 tbsp
    Paprika, 2 tbsp
    Oregano, ground, 2 tbsp
    Pepper, black, 2 tbsp
    Sage, ground, 1 tsp
    Lawry's Seasoned Salt, 1 serving
    *365 Brand Panko Bread Crumbs, 0.5 cup

Tips

non-vanilla almond milk works best, but, my shopper picked up the wrong kind, c’est la vie!


Directions

Preheat oven to 350 degrees

In pyrex dish, put chicken, potatoes, green beans, corn, seasonings, milk, and soup. Stir until mixed well, everything coated in seasonings and soup and milk.

Cover with cheese.

Cover with bread crumbs.

Place in oven and cook for 90 mins. or until the bread crumbs are dark golden brown.
