Number of Servings: 1

Ingredients

    • 5 slices whole-wheat or white bread, torn into small pieces

    • 2 large eggs

    • 12 ounces evaporated skim milk

    • 3/4 cup packed light brown sugar

    • 1/4 cup cocoa powder

    • 2 teaspoons vanilla

    • 1/2 teaspoons ground cinnamon

    • 2 tablespoons semi-sweet chocolate chips

    • 3 cups nonfat vanilla frozen yogurt

Directions

Preheat the oven to 350 degrees. Lightly oil an 8-inch square baking dish. Spread the bread in the dish in an even layer. In a mixing bowl, whisk the eggs. Add the evaporated skim milk, brown sugar, cocoa, vanilla, and cinnamon. Whisk until the sugar and cocoa dissolve. Pour the cocoa mixture over the bread. With a fork, mix in any unsoaked bread pieces. Sprinkle the chocolate chips over the top and let stand for 10 minutes. Bake for 35 minutes, or until puffed and set in the center. Serve warm, with a scoop of the frozen yogurt on top.

although I didn't make this recipe exactly, I have made recipes similar enough to this one to know this recipe is delicious. For those who object to the high calorie content, I would like suggest using light 40 calorie per slice bread and egg whites no yolk. that should cut the calories nicely. - 11/2/07

This is a really good "Cooking Light" type of recipe; real ingredients with substitutions made where appropriate. If you are in the mood for bread pudding, but want a healthier version that still tastes like bread pudding, this is the recipe! - 6/18/07

I made it camping (X3) in a dutch oven (with a bail instead of a lipped lid) over the fire. I set it on a grate over the coals. I stirred it every 5 minutes for around 30 minutes. Instead of yougurt, use whipped cream . It turned out perfect and I'm still hearing about how I outdid myself! - 5/7/09

We love serving this recipe for Christmas Eve. I usually stick a peppermint candy stick in it, along with a fresh leaf of mint, just to keep with the season. I like the idea of lowering the calories! We've never tried it with ice cream or yogurt; maybe we will give it a run. - 7/28/09

One thing that I wonder is if the recipe includes the frozen yogurt? I used egg beaters and skim milk, a little bit more chocalte chips. It was satisfying and very easy! It's silly to harsh on this recipe--lots of Spark ones aren't totally low calorie, and substitutions are easy. - 5/2/09

I use this as a once every other week treat for my self. Studies have shown that if you don't do one day of non diet foods that it is easier to forget about dieting and just go back to your bad habits. So once every 2 weeks I have a day that I eat the foods that I won't, and still maintain my diet. - 5/3/08

Bread pudding is one of my all time favorite "go to" recipes. This chocolate cinnamon version makes a great winter time dessert (hard to beat the aroma of the chocolate/cinnamon combination baking in the oven). • If you do a recipe makeover on this and only change the number of servings from 1 to 6, the calories change to just a bit over 70 per serving.

Seriously? This is supposed to be 'healthy-ish'? It has 426 calories and 69 grams sugar in one serving! Adding a little whole grain and evaporated skim milk DOES NOT make this a healthy recipe! Disappointed in this as an alternative :( - 10/15/13
