Cabbage Roll Casserole

Introduction

Love cabbage rolls but hate rolling them so decided to do a stove top casserole that had all the ingredients but required simplified prep. It is tasty enough to become a favorite. To get more tomato flavor a tablespoon or 2 of tomato paste or diced canned tomatoes can be added to the recipe. Ingredients

    1 1/2 lb. lean ground beef or turkey
    1/2 c. chopped onion
    2 cloves garlic, minced (about 1 tsp)
    1/4 c. sliced or shredded carrot
    2 c. chopped cabbage
    1 can diced tomatoes
    1 c. marinara sauce
    1 1/2 - 2 c. chicken or beef broth
    1/2 c. brown rice, uncooked
    1 1/2 tsp. salt
    3/4 tsp. fresh black pepper
    1 tsp. dried thyme
    1/2 tsp. tumeric
    1/2 tsp. smoked paprika
    1/2 c. frozen green peas

Tips

I haven't tried it but I would think this would be a great candidate for the slow cooker. A great variation to the recipe would be to substitute a spicy sausage like Andouille for some or all of the ground meat.


Directions

Combine all ingredients except the peas (using 1 1/2 c. broth to begin) in a large skillet or dutch oven. Bring to a boil over med-high heat then reduce to a simmer, cover and cook until rice is tender: about 40-45 min. Check after about 20 minutes to see if more chicken broth is needed. Just before serving add peas and let them cook for 5 min. Taste and adjust seasoning as needed.
