Summer Pasta

Introduction

Ingredients

    6 oz. Fettucini Pasta
    1 Can Fire Roasted Tomatoes
    1 Cup Onion, diced
    2 Cups Peppers (any mix of red, green, or yellow), diced
    1 Cup Summer Squash, diced
    3 Cloves Garlic, minced
    2 tsp Basil
    2 Tbsp Olive Oil

Tips

You can substitute almost any vegetables to suit your tastes and what you have on hand. Mushrooms are a great addition. You can also top this with some parmesan cheese for added flavor or add crushed red peppers to give it a little "kick".


Directions

Cook pasta per package instructions, subtracting 1 minute cooking time. Dice vegetables and sautee together in a large, deep pan or skillet with olive oil, garlic and basil until softened, but still firm. Remove pasta from water and drain. Add pasta and one ladel of pasta water to cooked vegetables and mix thoroughly to coat with sauce. Serve.
