6 oz. Fettucini Pasta
1 Can Fire Roasted Tomatoes
1 Cup Onion, diced
2 Cups Peppers (any mix of red, green, or yellow), diced
1 Cup Summer Squash, diced
3 Cloves Garlic, minced
2 tsp Basil
2 Tbsp Olive Oil
You can substitute almost any vegetables to suit your tastes and what you have on hand. Mushrooms are a great addition. You can also top this with some parmesan cheese for added flavor or add crushed red peppers to give it a little "kick".
