Hearty Vegetable Power Soup

Ingredients

    2 Bouillon cubes
    3 cups of water
    1 can tomato paste (5.5 oz)
    3 carrots
    3 long celery stalks
    1 large onion
    4 cloves of garlic
    3 Brussel sprouts (shredded)
    1 tbsp oregano
    2 tsp fresh thyme
    1 tbsp basil
    1 tsp salt (or to taste)
    1 tbsp black pepper
    10 green beans

Directions

Makes 5 cups of cooked soup

Disolve: Bouillon cubes into water
Add: tomato paste and stir to blend
Chop and add to liquid mixture: carrots, celery, onion, garlic, brussel sprouts
Add for flavour: oregano, fresh thyme, basil, sea salt (or to taste), black pepper

Cover, bring all ingredients to a boil and then continue boiling 15 minutes
Add chopped green beans and simmer for another 10 minutes.
Serve and enjoy!
