Asparagus Lentil Soup

Ingredients

    6cups water
    2.5 cups dry lentils
    2 tsp. chicken base
    .5 tsp, black pepper
    2 TBS butter
    1 clove garlic
    1 tsp. fresh thyme
    2 jalapeno peppers (w/seeds)
    1 pound fresh aparagus (cut off 'tough' ends)
    1 large onion, diced
    2 medium potatoes, cubed
    2 stalks celery
    1 cup carrots, raw, grated

Directions

Makes 6 two cup servings
*Put 6 cups water in large soup pot and bring to a boil.
*Add the lentils, chicken base, pepper, butter, garlic, fresh thyme, and diced jalapeno peppers. Turn down heat to low/simmer for one hour, mixing occasionally.
*Add cut up asparagus, bring to a boil for 5 minutes, then turn heat to medium, and cook for 25 more minutes stirring occasionally.
*Add onions, potatoes, celery and carrots, Turn heat to med-low and cook for one and half more hours. Again, mix occasionally.
*Enjoy with a piece of whole wheat, sourdough or toasted pita bread. Excellent for lunch or light dinner.
