Healthified Potato Soup

Healthified Potato Soup

Introduction

Delicious Potato Soup adapted from my Grandmother's Recipe Delicious Potato Soup adapted from my Grandmother's Recipe
Number of Servings: 12

Ingredients

    Butter, salted, 2 tbsp
    Milk, canned, evaporated, nonfat, 6 cup
    Carrots, raw, 1 cup, chopped
    Celery, raw, 1cup, diced
    Garlic, 15 clove
    Onions, raw, 1 cup, chopped
    Potato, raw, 6 large
    Vegetable Broth, 6 cup

    I also add dry spices, garlic, onion, cumin, chili powder, cayanne pepper, salt and pepper, to taste 1-2 tsp each.

Directions

Put the butter in a large stock pot over med. high heat. add the chopped onion and garlic, cook for about 5 minutes or until the onions are translucent. Add the vegetable broth and turn heat up to high. Add all of the dry spices along with the diced potatoes.(cut each potato into about 8 pieces) Add the carrots and let boil for about 15 min. Add the celery and continue to boil until the potatoes are fork tender. Remove from heat and mash the potatoes. When smooth add the evaporated milk. Taste and adjust spices if needed. Dish into bowls and top with grated low fat cheddar cheese, crumbled bacon, and green onions.* This soup is goes wonderfully with crusty french bread!
