Quinoa Casserole

Introduction

This was a really basic recipe I created when I made stuffed peppers and had quite a bit of quinoa-salsa-cheese left over. This was a really basic recipe I created when I made stuffed peppers and had quite a bit of quinoa-salsa-cheese left over.
Number of Servings: 4

Ingredients

    1/2 cup quinoa, cooked
    1 1/2 cup cheese, shredded
    1 1/2 cup of salsa, to taste

Directions

1. Preheat oven to 350 degrees.

2. Prepare quinoa according to instructions. Once the quinoa is cooked, add about 1/2 cup cheese and 1/2 cup salsa. Cook until cheese is mostly melted, about 5 minutes.

3. Press quinoa mixture into a glass pie dish. Cook for about 15-20 minutes, until the quinoa begins to brown on top. DO NOT TURN OFF OVEN.

4. Top quinoa crust with remaining salsa, and then cheese. Bake another 15-20 minutes, until cheese is lightly browned and bubbling.

Serving Size: Makes 4 servings of about 1 cup each
