Elle's Lentils and Rice

Introduction

A super lo-cal, hearty dinner. I serve with hommous and whole wheat pita. A super lo-cal, hearty dinner. I serve with hommous and whole wheat pita.
Number of Servings: 8

Ingredients

    1 lb lentils, dry
    1 onion, chopped
    1 tbsp olive oil
    1 cup brown rice, uncooked
    4 cups chicken broth (can use vegetable broth for veg dish)
    1 cup water

Directions

Brown onion in olive oil. Add dried lentils and broth to pan. Season if desired (I use cumin, salt, and pepper). Bring to boil. Let cook for 15 minutes. Add rice and water. Continue to cook until lentils and rice are tender, up to 30 minutes. Enjoy!

Serving Size: Makes 10 servings
